What is the latest belief or practice for using altar bread that is other than wheat for those with Celiac Disease? Do you have recommended places to buy these special hosts?

Many with Celiac Disease ask their pastors/priests to buy a special type of host and use a pyx or other ciborium to separate the special host for those in the congregation with this disease.
